Savory Seed Crackers

These nutrient-dense, gluten-free seed
crackers are the perfect medium for healthy
dips, tuna or egg salad, or as a snack all by
themselves. The best part is that they’re so
satisfying and satiating that you won’t feel
the need to eat a ton at once.

Herbs & spices: Have fun with different herbs and spices. Or add some chopped nori / seaweed / furikake seasoning for even more flavor. Use 1-2 teaspoons of each, or adjust to taste.

Cheesy flavor: For a more cheesy flavor, you can also include 2-3 tablespoons of grated parmesan or nutritional yeast.

Substitutes for psyllium husk: Use the same amount of ground chia seeds or ground flax seeds.

Ingredients
1 ½ cups raw sunflower seeds
½ cup raw pumpkin seeds
1 cup sesame seeds
â…“ cup flax seeds
2 Tbsp psyllium husk
2¼ cups water
½ tsp salt
1 tsp dried rosemary or your favorite herbs
Instructions
1. Preheat oven to 300ºF / 150ºC
2. Mix all the ingredients in a large mixing bowl. Add water and stir well. Mix in any optional add-ins at this time. 3. Set aside for about 30 minutes to allow the mixture to thicken into a gel-like consistency.
4. Transfer the mixture to a baking sheet (or two) covered with parchment paper. Spread it into a thin layer - about â…• - â…™ inch. Bake for one hour.
5. Baking time may vary. Keep an eye on the crackers towards the end of baking so they don't burn!
6. Halfway through baking, take the tray out and cut the crackers into squares using a knife or a pizza cutter. Continue baking.
7. Remove the crackers from the oven and let them cool completely.
8. Serve with your favorite dips, tuna or egg salad, or all by itself.
