Chipotle Tofu Falafels with Spinach & Yogurt

If chipotle seasoning isn't your thing, substitute tahini for a more classic falafel flavor.

Ingredients

1 can (~ 15 oz) chickpeas, drained and rinsed.

½ cup tofu, roughly diced

2½ teaspoons chipotle paste or tahini

9 cups of fresh baby spinach
-
2 Tablespoons of plain Greek yogurt
-
2 Tablespoons hummus
-
4 Tablespoons extra virgin olive oil

Salt & pepper
Instructions
1. Preheat the oven to 360 degrees F and line a baking tray with baking parchment paper.
2. Put the chickpeas, tofu, 2 teaspoons of chipotle or tahini paste, olive oil, and a generous pinch of salt and pepper into a food processor and blend until the mixture starts to clump together.
3. Roll into 8 equal balls, lay out onto the tray, and press down to flatten slightly. Bake for 15 minutes, until golden.
4. Put the spinach in a dry frying pan with a pinch of salt and pepper and stir until wilted - this only takes a minute or so.
5. Stir the remaining chipotle or tahini into the yogurt.
6. When the falafels are ready, allow them to cool slightly and serve with the yogurt, spinach, and some hummus on the side.
