Lemon Salmon with Capers & Cilantro

Dairy-Free; Gluten-Free

This is my favorite oven-baked salmon recipe. It's simple yet full of flavors and nutrients. Salmon is an excellent source of Omega-3 fatty acids (the good kind of fat!), while fresh cilantro contains multiple carotenoids and hefty antioxidant power. And don't underestimate capers! These little buds have tons of nutrients (see my blog post "The Top 7 Unexpected Superfoods"  


  • Look for wild caught salmon over farmed. Regardless, your best bet is to find a local butcher or grocery store with a reputation for good quality fish sources.

  • ​Pair this with roasted vegetables, on top of a super salad, or as your morning protein.

  • Great alongside your choice of brown rice, quinoa, sweet potato, or whole wheat naan bread.



  • 4 salmon filets, approx 6 oz each

  • 1⁄4 cup extra-virgin olive oil

  • 1⁄2 teaspoon salt

  • 1⁄2 teaspoon fresh ground black pepper

  • 1 tablespoon garlic powder

  • 8 lemon slices (about 2 lemons)

  • 1⁄4 cup lemon juice (about 1 lemon)

  • 1⁄2 cup white wine

  • 4 teaspoons capers


  1. Eat by itself or serve with your choice of rice, quinoa, sweet potato, and/or whole wheat naan bread.

  2. Sprinkle with chopped cilantro for an added punch of anti-inflammatory protection.
